Each sunny morning you will wake to an exquisite breakfast, replete with freshly brewed organic coffee grown in our plantation and succulent mango, papaya, pineapple and bananas from the Inn's own organic orchards.

The hotel owners ask guests to reserve their evening meal with us as early as possible and to choose the main course from the Menu of the Day. This will allow chefs time to buy and prepare daily only the freshest vegetables, fruit, poultry and fish and to pick only what is needed for that meal from the hotel gardens and orchards. If your children prefer to order from our children's menu, it would be very helpful to know beforehand. Your children are also welcome to enjoy the Menu of the day at half price and in child-size portions.

Finca Rosa Blanca has had a long-standing tradition of encouraging guests to dine together and share their experiences while in Costa Rica and their personal histories. They offer the Travelers Table to you at 7pm. A family-style seating of 12-16 people at our large communal table will have a chance to sit together and partake of our 4-course gourmet organic dinner.

Finca Rosa Blanca Tours: Personalized guided tours can be arranged to Rosa Blanca's own sustainable organic coffee farm as well as to the local community, including projects with the Children's Food Bank, Barrio Jesus Elementary School, the Barrio Jesus Recycling Center and CENDAS, the senior citizens center that hand crafts beautiful rugs made from recycled rags. They offer a free Sustainability Tour of the Farm and the hotel where the many aspects of the Costa Rican Certification of Sustainable Tourism (CST) program are explained and experienced.

Nature Tours: Rosa Blanca is renowned for its own certified naturalist and guide, who will take you on a bird watching walk in the hotel gardens and coffee farm as well as to many of the area's national parks, cloud forests, biological rain forest reserves and botanical gardens. Other tours include butterfly farms, bungee jumping, white water rafting as well as horseback tours from the hotel's own stables to experience the coffee fields and landscapes of Costa Rican country life, including riding to the slopes of Barva Volcano.

Hiking: Guests can enjoy many day excursions, including hiking into the Braulio Carillo National Park Cloud Forest, and experiencing the splendor of the Barva, Poás and Irazú volcanoes.

Coffee Tour: Experience coffee through the ages; learn how coffee was discovered, traded and consumed, then stroll the lanes of our organic sustainable coffee plantation and learn the entire process of organic cultivation and harvest, including participating in the picking of coffee during our harvest Season (Oct- Jan.) Your guides will then take you through the processing of coffee, including cleaning the berries and drying them, ending with roasting your own coffee in our roasting and packing house.

Learn how the experts discern and rate gourmet coffee by participating in a “coffee cupping” (catación) session with a knowledgeable Barista and Coffee Tour Guide. Finish up with a walk to the hotel coffee bar where you will learn to make a cappuccino, café latte and espresso coffee.

Sit out on the spacious deck and enjoy the views of the volcanoes above and coffee fields below while sipping your cappuccino, enjoying fresh Rosa Blanca pastries and learning more about the benefits to the environment and the community of an organic sustainable coffee farm. This tour plus the cupping session and the coffee break and pastries session will be about 2 hours.

Coffee Farm
Finca Rosa Blanca has 30 acres of hard bean coffee which is certified organic by the BCS OKO Garantie, an international organic agriculture certification and is certified sustainable by Rain Forest Alliance and ICAFE, the Costa Rican National Organization for Coffee.

The Coffee Plantations: Finca Rosa Blanca has planted over 5,000 native trees on their coffee plantations with the help of the environmental protection agency (MINAET) and local school children. These native trees produce shade and nitrogen for the organic coffee and have created biological corridors for the birds and animals of the area. The coffee is planted following the natural topography of the farm to avoid erosion and water waste and is protected by living fences planted with native shrubs and trees.

The farm uses no agrochemicals, pesticides, herbicides or fungicides on the farm preferring to apply the rich compost from our vermiculture (worm beds) and from the composting of organic refuse at the hotel and we apply only natural remedies for the fungus and pests which often plague coffee.

Sustainability
Since 1985, when the Jampols began their project at Finca Rosa Blanca, they have always had one important goal in mind: to leave the minimum possible trace of their existence. Since the beginning of their adventure on this property, they have concentrated on an ambitious plan of recycling and regeneration, social consciousness and education.

Finca Rosa Blanca Coffee Plantation and Inn, the first certified sustainable hotel in Costa Rica, has evolved over the last 20 years to become the highest ranking member of the prestigious Sustainable Tourism Certification program (CST) and the only hotel that has achieved a perfect score of 100%. The CST, regarded as the strictest and most demanding program in the world for verifying the sustainability of hotels and tour operators, awards from one to five “green leaves” to those entities which participate in the program. As of 2009, there are approximately 130 hotels and 10 tour operators which are certified by the CST.

The Inn seeks to demonstrate that sustainability can be incorporated into an upscale hotel setting by combining elements of environmental conservation, education, training, luxury, community development and innovative building techniques.
