A Culinary Journey Inspired by the Amazon
Dining aboard the Aria Amazon is a remarkable sensory experience led by celebrated Peruvian chef Pedro Miguel Schiaffino. Fusing refined culinary techniques with native Amazonian ingredients, Chef Schiaffino crafts a menu that highlights the bold, seasonal flavors of the region.
Since 2001, Chef Schiaffino has explored the culinary traditions of Amazonia, working alongside anthropologists and environmental experts to better understand the region’s ingredients and cultural heritage. Known as one of the pioneers who elevated Peruvian cuisine to the global stage, he draws deeply from the rainforest—his self-proclaimed “natural habitat.” Remarkably, 70% of the ingredients used on board are locally sourced, supporting both sustainability and local communities.
With international acclaim and accolades from The Diners Club World’s 50 Best Restaurants Academy for his innovative work at
MALABAR and
ámaz in Lima, Chef Schiaffino brings a world-class, Amazon-influenced dining experience to every guest on board the Aria Amazon.
