Dining aboard Aqua Mare is a celebration of Galapagos-inspired cuisine, masterfully led by award-winning Peruvian chef Pedro Miguel Schiaffino. His culinary approach draws from the unique Peruvian Nikkei tradition, blending Japanese techniques with bold South American flavors. Guests can look forward to signature creations such as potato llapingachos, tuna crudo, barbecued plantains, and shrimp ceviche—all crafted from ethically sourced ingredients that support local fishermen, farmers, and communities.
The bar program is equally thoughtful, featuring regionally inspired cocktails like the Aqua Bloody Mare, which substitutes traditional ingredients with Andean mashua and tree tomato. The curated wine selection complements the onboard menu, with a focus on high-quality varietals from South American vineyards.
Chef Schiaffino, a native of Peru, is internationally celebrated for pioneering the global recognition of Amazonian cuisine. His innovative culinary work at renowned Lima-based restaurants MALABAR and ámaz has earned acclaim from The Diners Club World’s 50 Best Restaurants Academy, further elevating Aqua Mare’s dining experience into a journey of its own.
